Egg less Chocolate Chip Cookies

Chocolate chip cookies are one of the Americas most famous cookies. Recently when we went to Trader Joes shop we got a small packet of semi sweet chocolate chips and cocoa powder .so just thought of trying these cookies and eggless chocolate cake. After seeing many recipes I finally have tested the below version and giving you the recipe.

Ingredients:
· All-purpose-flour – 2 cups
· Baking powder – 1 tsp
· Vanilla Essence – 1 tsp
· Semi –sweet Chocolate chips -1 tbsp
· Cocoa powder – ¼   tbsp (I used Hershey’s)
· Unsalted butter – ½ cup
· Granulated Sugar – 1 cup

Method:
· Preheat the oven to 350o F
· Beat the butter and sugar in a mixer to form a creamy mixture.
· Take a large bowl and add the flour, cocoa powder, Vanilla essence, baking powder, chocolate chips and the creamy mixture and mix well all the ingredients.
· Knead the dough to a firm mixture.
· Now take the dough and prepare small lemon sized balls out of it.
· Using palm of the hand, flatten each cookie to ½ inch thickness and place them on a slightly greased cookie sheet with each one 3 inches apart.
· Bake the cookies for 25 min -30 min until they become lightly brown in colour. (Time varies from oven to oven).
· Remove from oven; let them cool on a wire rack.


Alu bonda



Ingredients:

· Boiled and Mashed Aloo (Potatoes)- 2 large
· Boiled frozen Peas -1 small cup
· Besan – 2 cups
· Oil for frying
· Green Chillies – 2 ,chopped
· Coriander leaves – 1 tbsp, finely chopped
· Garam masala – ¼ tsp
· Salt to taste
· Red chilli powder- to taste
· Turmeric powder – ¼ tsp
· Ajwain /Vamu -2tsp
· Ginger -1 inch piece

Method:

· Take a small bowl and put the besan flour in that and add red chilli powder, salt, ajwain and turmeric powder and add water to the batter to get the consistency and form like a batter.
· Boil the potatoes and peas with a little bit of salt and mash them.
· Grind the green chillies and ginger, now mix them in the mashed potatoes mixture and add the chopped coriander leaves.
· Roll the mixture into small balls and mix into the batter.
· Take the heavy bottomed skillet and add oil to it and heat it for deep frying.
· Dip the potato mixture into the batter and put them into oil and fry them deeply / until they are in golden brown in colour
· Remove them and put in on a paper towel so that they will absorb the oil.
· Serve them hot with mint chutney/ tamarind chutney.

Pesarattu

Pesarattu is a delicious type of dosa made specifically from green moong dal. It is a specialty from the state of Andhra Pradesh. This wonderful and tasty recipe is easy to prepare and very nutritious. Pesarattu's are traditional eaten with coconut chutney, but the original famous combination in Andhra is Pesarattu with upma.

Ingredients: 

  • Whole green moong dal -2 cups
  • Rice Flour – 11/2 tbsp
  • Ginger- 2 inch (peeled and finely minced)
  • Onion – 1 large (finely chopped) 
  • Green chilli- 3 or 4 finely chopped
  • Cumin seeds – 2 tsp
  • Salt to taste
  • Oil – as required

Method:


· Soak the whole green moong dal overnight in just enough water to cover. Next day, drain well and using a mixer (or blender) grind into a slightly thick batter using water as needed, also add a small piece of ginger and green chilli to it. Transfer to a large mixing bowl, cut the remaining ginger, Onion, green chillies into very small pieces and also take the cumin seeds into one plate.
· Using a flat tawa or non-stick pan on medium high heat, add a little oil and spread evenly to coat the entire surface. When hot, add a large ladle full of the batter to the centre of the hot tawa. Using the back of the ladle spread the batter evenly into a thin layer to form like a dosa.

· Now sprinkle the onions, cumin seeds, ginger pieces and green chillies onto the top of the pesarattu and pour little bit of oil to the surrounding of the pesarattu.

· Let the pesarattu become golden and crispy (2-3 minutes) before turning it on the other side. Add a little oil if needed, remove after 1-2 minutes and serve with Chutney / with Upma in the middle.

Oatmeal Cookies

Ingredients :
• Butter -3/4 cup
• Sugar- 11/2 cup
• Water-1/4 cup
• Baking soda -1/2 tsp
• Dry fruits – hand ful .
• Vanilla extract -1tsp
• Oatmeal – 3 cups [I used quaker oats]
• All –purpose flour /Maida – 2 cups
• Parchment / wax /cookie sheet -1
Method :
• Grind the butter and sugar. Add water and vanilla. Blend to form a cream.
• Combine baking soda, oatmeal and flour. Mix well. Add to above ingredients.
• Mix all the dry fruits/nuts into that mixture.
• Take any shape or take a measuring spoon and pour the mixture of cookie into that and     drop it on a cookie sheet.
• Take a greased wax paper and drop the cookie mixture on to it.
• Bake at 350°F for 20- 25 minutes[In the middle check once for the rawness. Time varies from oven to oven , so be careful.
• After removing from oven . let them cool on a cooling grid for 10 mts.
• Enjoy the Cookies.
