Stuffed Sweet Peppers Curry

Hi Friends, I am back with another nice stuffed bell peppers curry. Last time when I went to Cost-co, I got these bell peppers. I searched many recipes online for this curry, finally got few and this recipe is a mix and match of all. Finally it turned out well and since then I started preparing this curry almost every 15 days, so without delaying further more. Here goes the recipe:

Ingredients:
· Bell peppers of different colours -10
· Carrots-2 (finely chopped)
· Onions-2 (finely chopped)
· Alu/potatoes- 2
· Ginger – 1 inch finely chopped
· Green chilies/jalapeño – 2 (finely chopped)
· Tomato sauce- 1tsp
· Chili Sauce – 1 tsp
· Garam masala powder – 1 tsp
· Dhania –Jeera Powder – 1 tsp
· Cumin seeds – 1tsp
· Ground nuts(peanuts) – coarsely grounded – 1 tbsp
· Oil – 1 tbsp

Method:

· Wash the sweet bell peppers and keep them aside.
· Take a pan and add some oil to it and add some cumin seeds and let them splutter, now add onions and fry them till golden brown.
· Add potatoes ,carrots ,green chilies, ginger   and salt to it, sauté them in the middle and let the vegetables cook till  tender soft and add tomato sauce,chilli sauce, garam masala,dhania-jeera pwd,coarsely grinded peanut powder  and mix well and cook for 5-7 min and remove from heat and let it cool off.
· Grind the cooked vegetables mixture.
·  Cut the peppers length wise and apply some oil on the peppers and stuff the mixture.
· You can either bake the peppers in the oven or put them in the pan and fry them.
  (I baked the peppers in the oven at 3500 F and baked them for 20 -25 min).
· Serve them Hot.

Eggless Banana Cake


Hi Friends, I am back with another eggless cake, so this weekend after a long time raj would like to have a cake and I was thinking what to do then I found the ripened bananas in my kitchen and immediately started searching out for recipes online and finally found one and tested the below version with few modification to the original version. Here goes the recipe:

Ingredients:
· Banana’s – 3 or 4 mashed
· Maida/All-purpose Flour – 2 cups
· Sugar- 1 cup
· Butter – 1 cup
· Soda -1/2 tsp
· Baking powder – 1 tsp
· Vanilla extract – 1 tsp
· Elaichi powder -1 tsp
· Cinnamon powder – 1 tsp
· Milk – ½ cup
Method:
·  Preheat the oven at 370o degrees
·  Mix the allpurposeflour, soda, baking powder, elachi powder, cinnamon powder and sieve them together.
·  In a mixer mash the bananas, put the sugar and butter a mix it for 1 min to get into a smooth paste.
· Slowly add the milk into the allpurposeflour mixture and mix them well to form into a smooth mixture.
· Now mix the mashed bananas mixture into the milk and allpurposeflour mixture.
· Just fold all the ingredients in one direction.
· Put the whole batter in a greased cake pan and put some almonds/raisins on the top of it and bake it in the oven for 20-25 min.
· Check with a knife or with a toothpick in the centre and if it comes out clean the cake is baked perfectly, otherwise, bake it for another 5 – 10 min and check it out once again.
· When it is baked, remove and let it cool for sometime and then cut it and serve it.

Vanilla Cookies

Hi Friends , after a long time i thought of trying some simple eggless cookies and started searching for reciepes .finally i came thru Ashwini's blog , which is a wonderful blog and one of the blogs i follow regularly. In her blog i found about this valentine heart cookies and i tried those and it really have turned out very well.Thanks to Ashwini for sharing this reciepe.if u still have any doubts on this reciepe u can always check Ashwini's blog .so the reciepe goes like this: 




Ingredients:
  • All-purpose flour / Maida – 2 cups
  • Unsalted butter/Clarified Ghee – 2/3 cup
  • Fine powdered sugar – 1 cup
  • Vanilla extract – 1 tsp (good quality one is preferred)
Method:

  • Pre-Heat the oven to 350o
  • In a large bowl, sift together the flour, butter and rub the butter with your hands so that it gets mixed into the flour without any lumps.
  • Add Sugar and vanilla extract and knead the dough to form a firm ball.
  • Place the dough on a lightly floured surface and roll the dough like a chapathi but with 1- inch thickness.
  • Now cut the cookie dough in whatever shape you want and place them on a lightly greased baking sheet/ wax paper with butter.
  • Place them in the oven for 10- 15 min and remove them.
  • Let them cool on a rack and sprinkle the sugar dusting on those cookies.
  • Place them in a air –tight container for a longer period . 







Eggless Orange Cake





Ingredients:
  •  All-purpose flour/Maida – 2 cups 
  • Granulated sugar – ¾th  cup (finely powdered)
  • Baking soda – 1 tsp 
  • Baking powder- ½ tsp 
  • unsweetened orange juice – 2 cups ( fresh is better)
  • 1 teaspoon (5ml) grated orange zest
  • Vegetable Oil – 1/3 cup
 Method :
  •  Preheat the oven to 350°F (180°C).
  • In a medium bowl, stir together the flour, sugar, baking soda, and baking powder until well mixed. All at once, add the orange juice, vegetable oil, and orange rind/zest.
  • Stir just enough to combine the ingredients, then immediately pour into the greased baking pans.
  • Bake for 35 to 40 minutes check with a toothpick poked into the middle of the batter and see whether it comes out clean, and it is lightly browned on top.
  • Cool completely on a cooler rack .



Note : I have not done any icing or dusting on it . you can do the sugar powder dusting or the icing.


Salsa de Verde / Green Salsa



This authentic Mexican salsa Verde has a fabulous flavour; there are 2 different ways of preparing the salsa. One with normal red tomatoes and other with green husked tomatoes, the green tomatoes are called as tomatillo, Green salsas are almost always more mild than red salsas. The main difference between regular salsa and salsa Verde is that tomatillos are used instead of red tomatoes.


Ingredients:

· Tomatillos, husks removed, quartered – 5
· White or yellow onion- 2 (skin removed, coarsely chopped)
· Cilantro - 1 bunch
· Salt – 1 teaspoon
· Green chillies/Serrano peppers – 2 stemmed, seeded and chopped
· Lemon juice – 1 tbsp
 
Method
  • Place tomatillos in a vessel, cover with water. Bring to a boil and simmer for 5 minutes, remove tomatoes with a slotted spoon.
  • Place tomatillos, lime juice, onions, cilantro, and green chillies, in a mixer / blender and grind until all ingredients are finely chopped and mixed. Season to taste with salt. Cool in refrigerator.
  • Serve with chips or as a salsa accompaniment to Mexican dishes.
Note: When i have done for the second time i just chopped few red tomatoes pieces and sprinkled above. so sharing that image also.
